Whether you enjoy these SUPER BOWLS during the big game or not, each of these casseroles are chock full of delicious and nutritious SUPER FOOD ingredients. Not only will you thrill to the excitement of the game, but also that you’ve consumed a ton of healthy vitamins, antioxidants, and minerals. Bottom line: delicious and good for you!

The basic recipe below details how to make the CHICKEN FIESTA BOWL! Be sure to scroll down to see the EPIC 10 variations that ROCK OUT this basic recipe.

To make CHICKEN FIESTA BOWL

  • 1 lb grilled chicken breast (you can use turkey as an alternative), sliced and chopped

  • 1 packet instant brown rice (can replace with quinoa)

  • 1 cup chicken or vegetable broth

  • 1 15 oz. can diced tomatoes, drained

  • 1 15 oz can black beans, drained

  • 2 jalapeños, seeded and diced

  • 1/4 cup yellow onion, chopped

  • 1 TBSN minced garlic

  • 1 avocado, sliced and chopped

  • 1/4 cup fresh cilantro, chopped

  • 1 TBSN chili powder

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • (optional) 3/4 cup shredded Colby jack cheese

  • (optional) 1/4 cup kernel corn

Medium mixing bowl, Large mixing bowl, large baking casserole pan, sharp knife, measuring spoons, measuring cups, aluminum foil, cooking spray, serving bowls

Prep: 20 min

Cook: 30 min. Ready: 50 min Serves: 4-6

1. Preheat oven to 350ºF.


2. Spray a large casserole dish with nonstick cooking spray.

3. In a medium bowl, mix the broth, paprika, chili powder, and cumin.


4. In a large bowl, mix together diced tomatoes, black beans, instant brown rice. onions, jalapeño, minced garlic, and all of the spices. Then, add in the grilled chicken and mix. (Optional) If preferred, add corn kernels.


5. Add ingredients to dish and pour broth mixture on top coating all ingredients.


6. Bake the casserole for 20 minutes at 350ºF.


7. If you are adding cheese, sprinkle on top and increase heat to 375ºF. Bake for an additional 10 minutes.


8. Spoon into bowls and top with avocado and chopped cilantro. serve hot. If desired, add guacamole, sour cream, or Chipotle or Ranch dressing.



BEEF BURRITO BOWL

Follow the same preparation and cooking steps as the basic recipe, using these ingredients. Replace with beef broth;

  • 1/2 lb ground beef or bison, cooked drained

  • 1 TBSN garlic, minced

  • 1 packer instant cooked brown rice

  • 15 oz can black beans, drained

  • 16 oz jar preferred salsa

  • 4 green onions, chopped

  • 1 TBSN chili powder

  • (optional) 4 oz cream cheese

  • (optional) 1 cup shredded Cheddar Cheese

 

BROCCOLI & CHEESE BOWL

Follow the same preparation and cooking steps as the basic recipe, using these ingredients:

  • 3 cups broccoli florets

  • 1/2 cup onion chopped

  • 3 cups shredded cheddar cheese

  • 2 ounces cream cheese cut into small cubes

  • 1 teaspoon smoked paprika

  • 1/4 teaspoon garlic powder

  • 2 TBSN chopped parsley

 

SALMON & SCALLOPS BOWL

Follow the same preparation and cooking steps as the basic recipe, using these ingredients:

  • 1 lb salmon, baked (flaked)

  • 1 1/2 cups fresh spinach leaves

  • 1 packer instant cooked brown rice

  • 8 ounces cheddar cheese (shredded)

  • 1 red bell pepper (chopped)

  • 1 medium onion (chopped)

  • 1 lb baked scallops

  • 1 TBSN garlic, minced

 

CHEESEBURGER BOWL

Follow the same preparation and cooking steps as the basic recipe, using these ingredients. Replace with beef broth;

  • 1/2 lb ground beef or bison, cooked drained

  • 1 packer instant cooked brown rice

  • 1 small yellow onion, chopped

  • 1 15 oz. can diced tomatoes, drained

  • (optional) 1 cup shredded Cheddar Cheese

 

PIZZA BOWL

Follow the same preparation and cooking steps as the basic recipe, using these ingredients. Replace broth with tomato marinara sauce;

  • 1 15 oz. can diced tomatoes, drained

  • 1/4 cup yellow onion, chopped

  • 1 TBSN minced garlic

  • 1/4 cup sliced mushrooms

  • 1/4 cup fresh parsley, chopped

  • 1 TBSN oregano

  • 3/4 cup shredded Mozzarella cheese

  • 1/4 cup Parmesan cheese

  • (optional) 1/2 cup crumbled turkey sausage

 

FRENCH TOAST BERRY BOWL

Follow the same preparation and cooking steps as the basic recipe, using these ingredients:

Replace broth with 2 cups Almond milk mixed with 4 large eggs, beaten;

  • 1 loaf of sourdough bread, cubed into 1.5" squares

  • 1 8oz block low-fat cream cheese, cubed

  • 1 1/2 cups diced fresh strawberries

  • 1 1/2 cups fresh blueberries

  • 1 1/2 cups fresh raspberries

  • 2 TBSN preferred sweetener

 

CHICKEN & CAULIFLOWER BOWL

Follow the same preparation and cooking steps as the basic recipe, using these ingredients:

  • 1 pound boneless chicken breasts, baked and sliced

  • 1 TBSN olive oil

  • 1/4 cup Almond milk

  • 2 head cauliflower, chopped

  • 1 teaspoon onion powder

  • 1 teaspoon turmeric

  • 1 TBSN parsley (chopped)

  • (optional) 1 cup cheddar cheese (shredded)

 

SWEET POTATO BOWL

Follow the same preparation and cooking steps as the basic recipe, using these ingredients. Replace broth with vegetable broth and 1 cup Almond milk:

  • 8 cups sweet potatoes, baked

  • 1 TBSN ground flaxseed

  • 1 teaspoon cinnamon

  • 1 teaspoon ground nutmeg

  • 1/2 cup coconut sugar

  • 1 cup chopped pecans

  • 1 cup raisins

  • 1/2 cup old-fashioned oats

 

CUBAN PULLED PORK BOWL

Follow the same preparation and cooking steps as the basic recipe, using these ingredients. Replace with beef broth;

  • 2 lb pork shoulder, slow cooked and shredded

  • 1/2 cup fresh cilantro, chopped

  • 3 TBSN olive oil

  • 2 TBSN orange zest

  • 1/4 cup orange juice

  • 2 TBSN garlic minced

  • 1/4 cup fresh mint, chopped

  • 1 TBSN dry oregano

  • 1 red chili pepper, seeded

  • 1 TBSN cumin

  • 1 large onion, chopped

  • 1/4 cup chopped green onion

  • 1 packet instant brown rice

  • 1 can black beans, drained

 

APPLE FRITTER BOWL

Follow the same preparation and cooking steps as the basic recipe, using these ingredients:

Replace broth with 2 cups Almond milk mixed with 4 large eggs, beaten:

  • 3 Granny Smith apples, peeled, cored and chopped (about 1 1/2 cups)

  • 6 TBSN preferred butter

  • 1 cup packed brown sugar

  • 1 teaspoon cinnamon

  • 1 teaspoon nutmeg

  • 2 cups old fashioned oats

  • 1/2 cup Almond milk

  • 1/2 cup cinnamon apple sauce
