1. Brine chicken 3 hours before baking. Click here for directions for brining chicken. 2. Preheat oven to 450°. Cover a baking sheet with aluminum foil and coat with cooking spray. 3. Drizzle chicken with olive oil. 4. Use a sharp knife to cut a pocket into the side of each chicken breast. For some recipes, you can simply cut diagonal slits in the top of the chicken breast and fill the slits with stuffing. Set chicken aside. 5. Prepare stuffing ingredients (see Epic 10 variations listed below.) 6. Use a spoon to overfill each pocket and/or slit with prepared stuffing. 7. Bake chicken 20-25 minutes. Use a small cooking thermometer to measure the cooked chicken temp in order to tell if it is ready to go (the safe cooked chicken temp is 165°F). 8. Remove from oven. Cover chicken with aluminum foil and let rest for 5-10 minutes. 9. Garnish before serving with recommendations listed below.
SPINACH, GORGONZOLA & SUNDRIED TOMATO STUFFED CHICKEN
Stuffing Ingredients:
8 oz Gorgonzola cheese, crumbled
1 cup fresh baby spinach leaves
2 TBSN minced garlic
1/4 cup sliced dried tomatoes
1 TBSN oregano
2 TBSN fresh parsley, chopped
1 TBSN garlic powder
1 teaspoon salt
Follow these Steps:
1. Mix the salt, garlic powder, oregano and parsley in a small bowl.
2. Save four teaspoons of seasoning and set aside for final topping.
3. Sprinkle about 1 teaspoon of the seasoning mixture evenly over all sides of each chicken. Save the rest aside.
4. Add a pinch of spinach, dried tomatoes onto the center of each breast.

Stuffing Ingredients:
8 oz Mozzarella cheese, shredded
8 oz Parmesan cheese, shredded
2 TBSN minced garlic
2 cups of preferred red marinara sauce
1 TBSN oregano
2 TBSN fresh parsley, chopped
1 TBSN garlic powder
1 teaspoon salt
Follow these Steps:
1. Mix the salt, garlic powder, oregano and parsley in a small bowl.
2. Save four teaspoons of seasoning, one cup of marinara sauce, and 4 oz of Mozzarella cheese and set aside for final topping.
3. Sprinkle about 1 teaspoon of the seasoning mixture evenly over all sides of each chicken. Save the rest aside.
4. Combine the remaining Mozzarella cheese, Parmesan, garlic, marinara sauce and seasoning mixture and stir well to combine.
5. Spoon the stuffing mixture into each chicken breast.

Stuffing Ingredients:
1 teaspoon Garlic Salt
1 cup Pesto sauce
8 oz Mozzarella cheese, shredded
1 cup sundried tomatoes, sliced
1/4 cup fresh basil leaves, chopped
Follow these Steps:
1. Sprinkle some of the garlic salt evenly over all sides of the chicken.
2. Reserve 1/2 cup of pesto sauce for topping.
3. Add Mozzarella cheese, remaining pesto sauce, tomatoes, and basil to the remaining garlic salt and stir well to combine.

Stuffing Ingredients:
1 TBSN garlic powder
1 TBSN onion powder
12 slices Swiss cheese
1/2 lb honey ham, sliced
1/4 cup English mustard
1 egg, beaten
1 cup Panko breadcrumbs
1 cup Italian breadcrumbs
Follow these Steps:
1. Instead of cutting a pocket in each chicken breast, slice each filet down the center and stop near the end to form one long chicken filet.
2. Combine the garlic and onion powder into a s small bowl; Sprinkle some of the seasoning mixture evenly on both sides of the chicken filet.
3. Spread a thin layer of English mustard on top of the flattened chicken filet.
4. Lay a thin layer of ham slices on top of the mustard.

Stuffing Ingredients:
8 oz cream cheese, softened
8 oz grated Parmesan cheese
1/2 cup fresh spinach leaves
2 TBSN quality mayonnaise
1 TBSN minced garlic
1 teaspoon red pepper flakes
1 teaspoon Kosher salt
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Follow these Steps:
1. Mix the paprika, salt, garlic powder, red pepper flakes, and onion powder in a small bowl. 2. Sprinkle about a teaspoon of the seasoning mixture evenly over all sides of each chicken. 3. 1 teaspoon rosemary
1 teaspoon parsley
1 teaspoon garlic powder

Follow these Steps: 1. Mix the thyme, salt, garlic powder, parsley, rosemary and onion powder in a small bowl.

1 teaspoon pepper
1 TBSN Worcestershire sauce
2 TBSN butter
1 red onion, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
8 slices Provolone Cheese, sliced into 1/4 triangles
Follow these Steps:
1. Instead of slicing a pocket, cut 6-8 diagonal slits on top of the breast, being careful not to cut through meat completely.
2. Sprinkle some salt and pepper evenly over all sides of the chicken.

8 0z whipped cream cheese
20 slices bacon
1/2 cup preferred BBQ sauce
2 TBSN chili powder
1 TBSN Cayenne pepper
1 teaspoon paprika
1/2 cup chopped green onion
1/4 cup chopped cilantro
Follow these Steps: 1. Mix the chili powder, Cayenne pepper, and paprika in a small bowl.
2. Sprinkle about a teaspoon of the seasoning mixture evenly over all sides of each chicken.

1 cup spinach, chopped
½ cup sun dried tomatoes

Stuffing Ingredients:
1/2 cup crumbled cooked bacon
8 oz. mozzarella cheese, shredded
2 TBSN preferred butter, melted
I packet dry ranch dressing seasoning mix
Follow these Steps:
1. Sprinkle some of the Ranch seasoning mixture evenly over all sides of the chicken. Reserve at least half of the mix and half of the crumbled bacon for the stuffing and topping
2. In a small bowl, add Mozzarella cheese, butter, bacon and the remaining Ranch seasoning mixture and stir well to combine.
3. Spoon the stuffing mixture into each chicken breast.
