These stuffed chicken breast recipes are perfect for your Keto diet.This easy stuffed chicken breast recipe is going to be a new low carb family favorite! Stuffings with cream cheese, Mozzarella, bacon, and Parmesan add a ton of flavor to stuffed chicken. For Vegan or vegetarian diets, you can use this recipe to stuff cabbage or bell peppers in the same way with our Epic 10 recipe variations.

1. Brine chicken 3 hours before baking. Click here for directions for brining chicken. 2. Preheat oven to 450°. Cover a baking sheet with aluminum foil and coat with cooking spray. 3. Drizzle chicken with olive oil. 4. Use a sharp knife to cut a pocket into the side of each chicken breast. For some recipes, you can simply cut diagonal slits in the top of the chicken breast and fill the slits with stuffing. Set chicken aside. 5. Prepare stuffing ingredients (see Epic 10 variations listed below.) 6. Use a spoon to overfill each pocket and/or slit with prepared stuffing. 7. Bake chicken 20-25 minutes. Use a small cooking thermometer to measure the cooked chicken temp in order to tell if it is ready to go (the safe cooked chicken temp is 165°F). 8. Remove from oven. Cover chicken with aluminum foil and let rest for 5-10 minutes. 9. Garnish before serving with recommendations listed below.



SPINACH, GORGONZOLA & SUNDRIED TOMATO STUFFED CHICKEN

Stuffing Ingredients:

  • 8 oz Gorgonzola cheese, crumbled

  • 1 cup fresh baby spinach leaves

  • 2 TBSN minced garlic

  • 1/4 cup sliced dried tomatoes

  • 1 TBSN oregano

  • 2 TBSN fresh parsley, chopped

  • 1 TBSN garlic powder

  • 1 teaspoon salt


Follow these Steps:

1. Mix the salt, garlic powder, oregano and parsley in a small bowl.

2. Save four teaspoons of seasoning and set aside for final topping.

3. Sprinkle about 1 teaspoon of the seasoning mixture evenly over all sides of each chicken. Save the rest aside.

4. Add a pinch of spinach, dried tomatoes onto the center of each breast.

5. Spoon a teaspoon of Gorgonzola cheese onto each chicken breast.

6. Sprinkle the remaining seasoning on top of each stuffed chicken before baking.

 

STUFFED CHICKEN PARMESAN

Stuffing Ingredients:

  • 8 oz Mozzarella cheese, shredded

  • 8 oz Parmesan cheese, shredded

  • 2 TBSN minced garlic

  • 2 cups of preferred red marinara sauce

  • 1 TBSN oregano

  • 2 TBSN fresh parsley, chopped

  • 1 TBSN garlic powder

  • 1 teaspoon salt


Follow these Steps:

1. Mix the salt, garlic powder, oregano and parsley in a small bowl.

2. Save four teaspoons of seasoning, one cup of marinara sauce, and 4 oz of Mozzarella cheese and set aside for final topping.

3. Sprinkle about 1 teaspoon of the seasoning mixture evenly over all sides of each chicken. Save the rest aside.

4. Combine the remaining Mozzarella cheese, Parmesan, garlic, marinara sauce and seasoning mixture and stir well to combine.

5. Spoon the stuffing mixture into each chicken breast.

6. Top each chicken breast with 1/4 cup of marinara sauce, 1 oz of Mozzarella cheese, and sprinkle remaining seasoning on top before baking.

 

STUFFED MOZZARELLA PESTO CHICKEN

Stuffing Ingredients:

  • 1 teaspoon Garlic Salt

  • 1 cup Pesto sauce

  • 8 oz Mozzarella cheese, shredded

  • 1 cup sundried tomatoes, sliced

  • 1/4 cup fresh basil leaves, chopped

Follow these Steps:

1. Sprinkle some of the garlic salt evenly over all sides of the chicken.

2. Reserve 1/2 cup of pesto sauce for topping.

3. Add Mozzarella cheese, remaining pesto sauce, tomatoes, and basil to the remaining garlic salt and stir well to combine.

4. Spoon the stuffing mixture into pocket of each chicken breast.

5. Top each chicken breast with reserved half cup of pesto before baking.


STUFFED CHICKEN CORDON BLEU

Stuffing Ingredients:

  • 1 TBSN garlic powder

  • 1 TBSN onion powder

  • 12 slices Swiss cheese

  • 1/2 lb honey ham, sliced

  • 1/4 cup English mustard

  • 1 egg, beaten

  • 1 cup Panko breadcrumbs

  • 1 cup Italian breadcrumbs


Follow these Steps:

1. Instead of cutting a pocket in each chicken breast, slice each filet down the center and stop near the end to form one long chicken filet.

2. Combine the garlic and onion powder into a s small bowl; Sprinkle some of the seasoning mixture evenly on both sides of the chicken filet.

3. Spread a thin layer of English mustard on top of the flattened chicken filet.

4. Lay a thin layer of ham slices on top of the mustard.

5. Lay a layer of 2 slices of Swiss cheese on top of the ham.

6. Roll the chicken filet to form a stuffed pinwheel. Toothpick the ends if necessary to keep roll in tact.

7. Spread a thin layer of mustard on top of each roll, and sprinkle with mixture of breadcrumbs to cover each top.

8.. Lay the remaining slices of Swiss cheese on top of each layer of breadcrumbs

9. Sprinkle remaining seasonings on top of the cheese before baking.

 

GARLIC PARMESAN & SPINACH STUFFED CHICKEN

Stuffing Ingredients:

  • 8 oz cream cheese, softened

  • 8 oz grated Parmesan cheese

  • 1/2 cup fresh spinach leaves

  • 2 TBSN quality mayonnaise

  • 1 TBSN minced garlic

  • 1 teaspoon red pepper flakes

  • 1 teaspoon Kosher salt

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder


Follow these Steps:

1. Mix the paprika, salt, garlic powder, red pepper flakes, and onion powder in a small bowl. 2. Sprinkle about a teaspoon of the seasoning mixture evenly over all sides of each chicken. 3. Add cream cheese, Parmesan, mayonnaise, spinach, and minced garlic to the remaining seasoning mixture and stir well to combine. 4. Spoon the stuffing mixture into each chicken breast before baking.

 

STUFFED HERB & MUSHROOM CHICKEN

Stuffing Ingredients:

  • 3 TBSN preferred butter

  • 2 cups sliced white mushrooms

  • 2 TBSN minced garlic

  • 1/4 cup red cooking wine

  • 1/4 cup Italian breadcrumbs

  • 1/4 cup Parmesan cheese, shredded

  • 1 teaspoon Kosher salt

  • 1 teaspoon thyme

  • 1 teaspoon rosemary

  • 1 teaspoon parsley

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder


Follow these Steps: 1. Mix the thyme, salt, garlic powder, parsley, rosemary and onion powder in a small bowl.

2. Sprinkle about a teaspoon of the seasoning mixture evenly over all sides of each chicken.

3. In a sauté pan, melt butter and sauté mushrooms until slightly browned. Add minced garlic, red wine, bread crumbs, and stir well to combine. Remove from heat and allow 10 minutes to cool.

4. Spoon the stuffing mixture into each chicken breast.

5. Spread remaining stuffing mixture on top of each chicken and sprinkle the remaining seasoning mixture before baking.

 

STUFFED CHICKEN PHILLY

Stuffing Ingredients:

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 TBSN Worcestershire sauce

  • 2 TBSN butter

  • 1 red onion, sliced

  • 1 green bell pepper, sliced

  • 1 yellow onion, sliced

  • 8 slices Provolone Cheese, sliced into 1/4 triangles


Follow these Steps:

1. Instead of slicing a pocket, cut 6-8 diagonal slits on top of the breast, being careful not to cut through meat completely.

2. Sprinkle some salt and pepper evenly over all sides of the chicken.

3.. In a sauté pan, melt butter and sauté peppers and onions until slightly browned. Add Worcestershire sauce and the remaining salt and pepper and stir well to combine. Remove from heat to cool for 10 minutes.

4. Insert peppers, onion, and Provolone triangles into each slit. Vary the colors of the pepper from slit to slit.

5. Lay any remaining peppers, onions, or cheese on top of chicken before baking.

 

STUFFED BBQ BACON JALAPENO CHICKEN

Stuffing Ingredients:

  • 1 sliced jalapeno

  • 8 0z whipped cream cheese

  • 20 slices bacon

  • 1/2 cup preferred BBQ sauce

  • 2 TBSN chili powder

  • 1 TBSN Cayenne pepper

  • 1 teaspoon paprika

  • 1/2 cup chopped green onion

  • 1/4 cup chopped cilantro


Follow these Steps: 1. Mix the chili powder, Cayenne pepper, and paprika in a small bowl.

2. Sprinkle about a teaspoon of the seasoning mixture evenly over all sides of each chicken.

3. In a small bowl, add whipped cream cheese, sliced jalapenos, green onion, cilantro and remaining seasoning mixture. Stir to combine.

4. Spoon the stuffing mixture into each chicken breast.

5. Spread BBQ all over the top and sides of the chicken.

5. Wrap each chicken in 5 slices of bacon before baking, having ends closed on the bottom of the chicken to hold it place when laid on the baking sheet.

 

STUFFED CHICKEN PRIMAVERA

  • 1 zucchini, halved lengthwise and thinly sliced into half-moons

  • 3 medium tomatoes, halved and thinly sliced into half-moons

  • 1 yellow bell pepper, thinly sliced

  • 1 orange bell pepper, thinly sliced

  • 1/2 red onion, thinly sliced

  • 4 teaspoons Italian seasoning

  • 1 cup mozzarella,shredded

  • Freshly chopped parsley, for garnish


Follow these Steps:

1. Instead of cutting a pocket, use sharp knife to make several slits in each chicken breast, being careful not to cut through meat completely.

2. Stuff each slit with slices of zucchini, tomato slices, bell peppers, and red onions. Varying the colors.

3. Drizzle with Italian dressing on all sides of the chicken.

4. Sprinkle with shredded mozzarella cheese.

5. Garnish with fresh chopped parsley before serving.

 

TUSCAN STUFFED CHICKEN

Stuffing Ingredients:

  • 1 cup Ricotta cheese

  • 1 TBSN garlic powder

  • 1 TBSN Oregano

  • 1 TBSN Parsley

  • 1 teaspoon thyme

  • 1 teaspoon rosemary

  • ½ cup Parmesan cheese

  • 1/2 cup chopped onion

  • 1 cup spinach, chopped

  • ½ cup sun dried tomatoes


Follow these Steps:

1. Mix the thyme, salt, garlic powder, parsley, and rosemary in a small bowl.

2. Sprinkle a teaspoon of the seasoning mixture evenly over all sides of the chicken. Reserve some seasoning and Parmesan cheese for the stuffing and topping.

3. Add Ricotta cheese, Parmesan, spinach, onions, and sundried tomatoes to most of the remaining seasoning mixture and stir well to combine.

4. Spoon the stuffing mixture into each chicken breast.

5. Sprinkle remaining seasonings and Parmesan cheese on top before baking.

 

BACON RANCH STUFFED CHICKEN

Stuffing Ingredients:

  • 1/2 cup crumbled cooked bacon

  • 8 oz. mozzarella cheese, shredded

  • 2 TBSN preferred butter, melted

  • I packet dry ranch dressing seasoning mix


Follow these Steps:

1. Sprinkle some of the Ranch seasoning mixture evenly over all sides of the chicken. Reserve at least half of the mix and half of the crumbled bacon for the stuffing and topping

2. In a small bowl, add Mozzarella cheese, butter, bacon and the remaining Ranch seasoning mixture and stir well to combine.

3. Spoon the stuffing mixture into each chicken breast.

4. Add any remaining seasonings and bacon on top before baking.
