Caribbean Iguana Stew

The Caribbean islands are home to a large populations of iguanas, so they naturally have found their way onto dinner tables. Iguana stew is one of more common Caribbean dishes.

If you don’t live in the Caribbean, it‘ll be difficult to find iguana at your local supermarket. You can substitute it with either fresh tuna or duck as they have similar taste and texture. Iguana meat tastes quite similar to roasted duck. It’s rich and full of flavor.

  • 2 pounds iguana meat, or substitute tuna or duck, sliced in large chunks

  • Juice of 1 lime

  • 3 cups water

  • 1 cup coconut milk

  • 10 small potatoes, diced

  • 3 tomatoes, chopped

  • 3 bell peppers, cut into 1-inch pieces

  • 1 cup Ramen noodles

  • 2 bay leaves

  • 1 teaspoon oregano

  • 1 sprig parsley

  • 1 sprig thyme

  • 3 stalks celery, cut into ½ inch pieces

  • 2 habanero chiles, seeds and stems removed, chopped

  • 3 cloves garlic, chopped

  • 1 ounce dark rum

Large mixing bowl, large pot with lid, cooking spoon, tongs, measuring cup. Preheat BBQ grill.

Prep: 30 min Cook: 65 min - 1 hr, 45 min Ready: 95 min- 2 1/2 hr Serves: 4-6

1. In a bowl, toss the meat with the lime juice. Cover and refrigerate for 30 min.

2. In a large pot, combine all the remaining ingredients, except the rum, and bring to a boil. Reduce the heat, cover, and simmer over low heat for 45 minutes.


3. Add the marinated meat, cover and cook over low heat for the following times:

  • Iguana, 1 hour;

  • Tuna, 20 minutes;

  • Duck, 40 minutes.


4. Just before serving, add the shot of rum and stir well.

Later the cancer patient ate 3 lizards meat everyday and after six months doctor examined him and it was a shocked that he was totally recovered from cancer.

It can also cure acne As mentioned before that lizard meat can be eaten to cure skin disease. This benefits including acne treatment. Eating lizard meat everyday can reduce the inflammation on skin and remove acne from face. Some people also use lizard blood to cure acne.

It Promotes long life A news that published in Daily Mail Uk reported that the oldest man on earth which live in Bolivia has passed his 123 years and survived cause he regularly eat lizard meat until now. This man still alive today and has 16 grandchildren and 39 great-grand-children. He still strong enough to walk along some kilometers everyday. Isn’t it amazing?

It cures epilepsy That myth that lizards cause epilepsy cause epilepsy is.. wrong! It actually cures it.. People in Asia has used lizard meat as medicine to cure many health problem such as epilepsy. Epilepsy is a disorder which occur in neurological system. Eating lizard that contains protein regularly can help to cure neurological disorder and maintain healthy nerves
